Ingredients:
- 2.5 cups all purpose flour
- ½ cup finely diced crystalized ginger
- 2 tsp baking soda
- ¼ - ½ tsp salt
- 14 tbsp room temp. salted butter
- 1 cup brown sugar
- 2 tsp grated fresh ginger
- 2 tsp Anjali’s Chai Masala Turmeric & Saffron*
- ¼ tsp ginger powder
- ¼ tsp ground cloves
- ¼ cup molasses or brown rice syrup
- 1 egg at room temp.
- Preheat the oven to 350F (175C).
- Mix together the flour, crystalized ginger, baking soda, and salt.
- In a different bowl mix the butter and brown sugar together until it’s creamy. Then add the fresh ginger, Anjali’s Chai Masala Turmeric & Saffron, ginger powder, ground cloves, molasses, and egg.
- Combine the two mixtures.
- Either form the dough into small, flattened balls or roll out the dough and cut out shapes with cookie cutters. Thinner will make a crunchier cookie and thicker will make a softer cookie. Roll the cookies in a shallow dish of sugar before placing them on a parchment-lined baking sheet.
- Bake the cookies until they’re golden, which will be around 10-15 mins, depending on the size and thickness.
