Triple Ginger Chai Cookies

Ingredients:

  • 2.5 cups all purpose flour
  • ½ cup finely diced crystalized ginger
  • 2 tsp baking soda
  • ¼ - ½ tsp salt
  • 14 tbsp room temp. salted butter 
  • 1 cup brown sugar
  • 2 tsp grated fresh ginger
  • 2 tsp Anjali’s Chai Masala Turmeric & Saffron*
  • ¼ tsp ginger powder
  • ¼ tsp ground cloves
  • ¼ cup molasses or brown rice syrup
  • 1 egg at room temp.  
  • Preheat the oven to 350F (175C).
  • Mix together the flour, crystalized ginger, baking soda, and salt.  
  • In a different bowl mix the butter and brown sugar together until it’s creamy.  Then add the fresh ginger, Anjali’s Chai Masala Turmeric & Saffron, ginger powder, ground cloves, molasses, and egg.
  • Combine the two mixtures.  
  • Either form the dough into small, flattened balls or roll out the dough and cut out shapes with cookie cutters.  Thinner will make a crunchier cookie and thicker will make a softer cookie.  Roll the cookies in a shallow dish of sugar before placing them on a parchment-lined baking sheet.  
  • Bake the cookies until they’re golden, which will be around 10-15 mins, depending on the size and thickness. 
* This is a spicy cookie already so if using Anjali's Chai Masala with Extra Ginger you can eliminate the extra ginger powder.
